I’ve been a pasta lover for my entire life, thanks to my Italian American background and my amazing chef mother. Growing up, she made a delicious dinner every night with a constant variety of fresh vegetables and complex flavors. I’ve always felt that regularly indulging in fresh, hearty, comforting meals that you love is worth the extra couple pounds, especially when sharing it with family and friends. 

In 2016 I went vegan after reading a book that changed the way I looked at our food system and I’ve never looked back. I’m not an extreme animal lover or a health nut, I just think we live in a country where we have plenty of alternatives and don’t have to inflict the kind of torture we do. Our food choices have consequences. I feel privileged to be in a position where I get to make daily life decisions that support the causes I care about. If everyone reduced their meat/dairy consumption, even a little bit within their means, our society could be a lot better off. I hope to play a small part in making that change.

All of that being said, there are a few things that I really missed when I first went vegan. Pesto and mac and cheese were some of the main ones. I’ve always been a big pasta eater and I’m usually not satisfied with a basic tomato sauce. Shortly after going vegan, I started making my own simple sauces and hosted a blog to document my favorites. It’s been some years since then but I truly feel like I’ve now perfected my 3 favorite sauces. It’s time to share them with others.

These sauces are fresh, clean and comforting. Enjoy them on any kind of pasta you like, as a dip, as a dressing, on pizza or any other way you can think of! They are all packed with veggies so they are great to give to kids as well. Use a whole jar on a pound of pasta to share with the whole family or just use a heaping spoonful on one bowl for a delish lunch. I hope you enjoy them :)
